  • Vineyards

    Hilly vineyards of the Municipality of Marano di Valpolicella, in the classic zone. Exhibition South - West. Ground of calcareous type.

    Grapes

    Corvina Veronese and Corvinone Veronese 70%, Rondinella 30%. Harvest and manual selection of the best bunches with purpose September.

    Fruttaio

    Withering from the end of September for about 120 days, in order to obtain an ideal concentration.

    Vinification

    soft pressing of the grapes in January; soaking prolonged for about 30 days with control of the temperature. Drawing off wine of the still sweet wine with about 120-130 g/l of sugar. Cooling and cleaning of the wine (pours) to avoid the continuation of the alcoholic fermentation.

    Affinamento

    Maturation in inoxidizable steel at temperature below 10°C on the yeasts for about 10 months. Evolution in bottle for 3 months.

    Tasting Notes

    Intense red colour with grainy reflexions. Refined, ethereal, fruity, fragrant. Sweet, velvety and rich taste with signs of cherry and morel.

    Analysis

    Alcohol 13 %; total Acidity 6,4g/l; sugary Remainder 130 g/l; clean dry Extract 34 g/l.

    Food Pairings

    Dessert wine. Indicated by dry sweets, biscuits and tender. It goes pleasantly also with strawberries or fruits with red berry. Fresh served ideal to 15-16°C.
